Add 60 grams of sugar and 10 grams of instant yeast to the milk and mix well until dissolved.

Let the mixture sit for 5 minutes to activate the yeast.

Add 50 grams of olive oil to the mixture and stir to combine.

Gradually add 500 grams of flour, mixing until incorporated.

Add 1/2 teaspoon of salt and 1/2 teaspoon of baking powder to the dough.

Knead the dough until it becomes soft and elastic, adding water as needed to achieve the right consistency.

Cover the bowl with a little oil and let the dough rise for about 30 minutes to 1 hour until doubled in size.

Once the dough has risen, divide it into pieces weighing 50 grams and 70 grams for different sizes.

Shape each piece into a ball and cover with plastic wrap and a towel for 5 to 10 minutes to prevent drying out.

Roll out each ball into a flat circle, keeping the center thicker than the edges.

Place a spoonful of apricot jam or Nutella in the center of each circle and fold over, sealing the edges tightly.

Arrange the filled pastries in a greased baking tray, leaving space between them.

Let the pastries rest for another 30 minutes to rise again.

Brush the tops with a mixture of egg yolk, milk, and vanilla extract for a shiny finish.
