1 egg
1/3 cup breadcrumbs
2 teaspoons oregano
pinch of sweet paprika
1/2 cup fresh chopped parsley

1 chopped yellow onion
1 chopped celery stalk
1 chopped carrot
1 chopped bell pepper
beef broth
1 large can whole tomatoes with juices
3/4 cup small pasta (like orzo)
red pepper flakes (optional)

In a bowl, combine 1.5 pounds of ground beef, 2-3 minced garlic cloves, 1 egg, 1/3 cup breadcrumbs, 2 teaspoons oregano, a pinch of sweet paprika, 1/2 cup fresh chopped parsley, a big pinch of kosher salt, and a big pinch of black pepper.

Drizzle in some extra virgin olive oil and mix everything together using gloves until well incorporated.

Lightly oil a sheet pan and form meatballs, placing them on the pan.

Preheat the broiler and broil the meatballs for 5-7 minutes until lightly browned.

In a large pot over medium-high heat, add extra virgin olive oil and then add chopped yellow onion, celery, carrots, bell pepper, and minced garlic.

Add a pinch of salt and sweat the vegetables for about 5 minutes until softened.

Add beef broth and a large can of whole tomatoes with their juices to the pot.

Season the soup with a pinch of pepper and the same seasonings used for the meatballs: oregano and sweet paprika.

Bring the soup to a boil and add 3/4 cup of small pasta, stirring to combine.

Add the broiled meatballs to the soup and let everything simmer for about 10-15 minutes until the pasta is tender and the soup thickens.
