  • 1 cup lentils, rinsed and drained
  • 1/2 cup walnuts, finely chopped

  • 1 tsp chili powder

  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 8 small corn tortillas
  • 1 cup mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. 1In a medium saucepan, combine lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain any excess water.
