Boil water and prepare an ice bath in a large bowl.

Make a small X on the bottom of each tomato and place them in boiling water for 45 seconds to 1 minute.

Transfer tomatoes to the ice bath and peel off the skin starting from the X.

Add peeled tomatoes and 2 garlic cloves to the Vitamix and blend until liquefied.

Add 1/4 cup of sherry cooking wine and blend again.
