Start by placing equal parts rice and water into a medium saucepan over high heat along with a pinch of salt and a tablespoon of oil, and add goya sazon seasoning with saffron.

Once the rice comes to a boil, lower the heat to medium.

Sear the chicken over medium-high heat for about 3 minutes per side.

Remove the chicken from the pan and let it stand for 4-5 minutes before pulling it apart with a fork.

Fluff the rice with a fork and add about a cup of mixed vegetables, stirring them into the rice.
