1 kg chicken
1 large onion or 2 medium onions (finely chopped)
1 tablespoon ginger (finely chopped)
2 tablespoons garlic (finely chopped)
4-5 curry leaves
1/4 cup coriander leaves (finely chopped)
2 medium tomatoes (finely chopped/pureed)
1 medium potato
1 chicken stock cube (optional)
1 tablespoon tomato paste
1 tablespoon lemon juice
5-6 green chillies
2-3 bay leaves
4 cardamom pods
4-5 cloves
1 inch piece of cinnamon
3 dried lemons (with cuts)
1/2 teaspoon turmeric powder
2 teaspoons paprika
1 1/2 teaspoons pepper powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
2-3 teaspoons Arabic spice mix
2-3 teaspoons salt
3 cups basmati rice (washed and soaked for 20-30 minutes)
5 1/2 cups hot water

Heat oil and sauté the whole spices.

Add the chicken pieces and cook over high flame for 3-4 minutes on each side.

Add the chopped onion and sauté until transparent.

Add the spices, tomatoes, dried lemon, tomato paste, potato, and green chillies.

Cover and cook over medium flame for 10 minutes.

After 10 minutes, add finely chopped coriander leaves, chicken stock cube, and lemon juice.

Add 4 cups of hot water, cover, and cook for 20-25 minutes.

After 20 minutes, open the lid and add the washed and soaked basmati rice. Add 1 1/2 cups more hot water.

Check the salt and add more if needed.

Cook for another 20-25 minutes over medium-low flame or until the rice is done and the water is dried.

Serve hot.
