Trim the skirt steak to remove some fat and identify the grain direction.
Season the steak with salt, black pepper, ground cumin, and coriander on both sides.
Heat a pan and add a little oil.
Cut the steak in half for better fit in the pan.
Cook the steak in the heated pan, flipping it after a few minutes.
Prepare the spicy black sauce (guasakaka) by adding smoked paprika and cayenne to the mixture.
Chop ingredients roughly for the sauce since they will be blended later.
Add two whole limes and a little vinegar to the sauce mixture to enhance flavor and preserve color.
Add chopped habaneros, cilantro, and one clove of garlic to the sauce.
Blend the sauce until smooth, adding salt to taste if necessary.
Prepare the arepas using harina P.A.N., mixing it with milk and a little vinegar to create a buttermilk-like consistency.
Add a little salt to the arepa mixture and form it into thin discs for cooking.
Heat oil in a pan and cook the arepas until golden brown on both sides.
