Olive oil is healthier but more expensive.
In a pan, heat 2 teaspoons of oil and add 1/2 teaspoon of cumin seeds and grated ginger.
Sauté for a few seconds until they start changing color.
Add chopped spinach to the pan. If using baby spinach, you can use it whole; if using normal spinach, chop it roughly.
Cover the pan and cook for 5 minutes without adding any seasoning.
After 5 minutes, uncover the pan and add a pinch of salt to taste, then cover and cook for another 5 minutes.
Add approximately 1/3 cup of sweet corn to the spinach and roughly crush the corn using a manual chopper.
Transfer the spinach and corn mixture to a bowl and let it cool down a bit.
Add 1/2 teaspoon paprika, 1/2 teaspoon roasted cumin powder, 1/2 teaspoon garam masala, and a handful of chopped cilantro to the bowl.
Mix and knead the mixture with your hands for about 2 to 3 minutes.
Add 1/2 cup of either chickpea flour, refined flour, semolina, oats flour, or whole wheat flour to the mixture.
Grease your hands with oil and shape the mixture into small patties or tikkis.
In the same pan, heat around 5 teaspoons or 3 tablespoons of oil.
Once the oil is hot, place the patties in the pan and let them cook on one side.
Flip the patties and cook on the other side until they become dark or reddish in color, adjusting the heat to medium to high.
Serve the hot patties with ranch dip, tomato ketchup, or salsa.
