Prepare the chicken by cleaning between the skin and meat, removing any tough sinew, and making cuts in thicker areas for even cooking.

In a bowl, mix olive oil, salt, and minced garlic before adding the chicken to ensure even coating.

Remove rosemary leaves from the stem and mix them into the marinade with the chicken.

Massage the marinade into the chicken, ensuring it coats both sides, then seal the bag and refrigerate for 1 hour.
