Lay plastic wrap on a surface to create an even cooking surface for the meat.
Spread seasoned breadcrumbs on the plastic wrap.
Add slices of provolone cheese on top of the breadcrumbs.
Layer sweet soppressata over the provolone cheese.
Sprinkle golden raisins on top of the soppressata.
Add a generous amount of chopped parsley on top of the raisins.
Roll the meat tightly using the plastic wrap, creating a single roll.
Secure the roll with kitchen twine, leaving a long string for easy removal later.
Heat extra virgin olive oil in a hot sauté pan.
Place the rolled meat into the sauté pan and brown it off.
Pour marinara sauce over the browned meat in the pan.
Seal the pan tightly and place it in an oven set to 300°F for 2.5 to 3 hours.
After cooking, cut the string and gently slice through the meat.
Plate the sliced meat and pour sauce over the top.
