Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. 1In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  2. 2In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to create the dressing.
  3. 3Pour the dressing over the quinoa mixture and toss gently to combine.
  4. 4Add the crumbled feta cheese and chopped parsley to the bowl and mix carefully to avoid breaking the feta too much.
  5. 5Taste and adjust seasoning if necessary, adding more salt, pepper, or vinegar as desired.
  6. 6Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
