Heat 1/4 cup of whole milk and 1/4 cup of water to 105-115°F (40-46°C).
In a small bowl, combine warm milk and water; sprinkle 4 teaspoons of active dry yeast and a pinch of brown sugar on top.
Mix the yeast mixture with a fork until incorporated and let sit covered with cling film and a tea towel for 10 minutes until foamy.
In a large bowl, combine 1 3/4 cups of warm milk, 2 tablespoons of melted unsalted butter, 2 tablespoons of brown sugar, and 1 tablespoon of salt; mix well.
Add 2 cups of bread flour to the mixture and stir until creamy.
Add the yeast mixture to the large bowl and mix well.
Gradually add 1 cup of bread flour, mixing until combined.
Add the remaining 3 cups of bread flour gradually, mixing until too hard to combine with a spatula.
Turn the dough out onto a floured surface and knead for 10-15 minutes until smooth and elastic.
Place the kneaded dough into an oiled bowl, cover with cling film and a tea towel, and let rise in a warm spot for about 90 minutes until doubled in size.
Grease two loaf pans with butter.
Turn the risen dough out onto a floured surface, cut it in half, and shape each half into a rectangle, folding and rolling it into a loaf shape.
Place each shaped loaf into the greased loaf pans and pat down to fill the bottom.
