4 medium sweet potatoes
2 tbsp olive oil
1 tsp salt
1/2 tsp freshly ground black pepper
1 tsp dried thyme
1 tsp dried rosemary

Peel the sweet potatoes.

Cut the sweet potatoes into little pieces.

Place the sweet potatoes into a bowl.

Cover the sweet potatoes with olive oil and mix.

Add salt and mix again.

Add freshly ground black pepper and mix again.

Remove thyme leaves using a strainer and add to the bowl.

Remove rosemary leaves using a fork and add to the bowl.

Roughly chop the herbs and sprinkle over the sweet potatoes, then mix.
