Roasted Sweet Potatoes

4 sweet potatoes

1/2 cup dark brown sugar
1/4 teaspoon ground clove
2 teaspoons cinnamon

Start with 4 even sized sweet potatoes.

Half the sweet potatoes.

Boil the sweet potatoes in a large pot of salted water that is already boiling for about 10 to 15 minutes until fork-tender.

While the potatoes are boiling, prepare the topping by mixing together 1 stick of room temperature butter, 1/2 cup dark brown sugar, 1/4 teaspoon ground clove, 2 teaspoons cinnamon, and 1/2 teaspoon ground nutmeg until crumbly.

Check the potatoes after about 15 minutes; they should be soft to the fork but not fully falling apart.

Drain the potatoes and peel them carefully while they are still hot.

Cut the peeled potatoes in half again, quartering them in total.

Butter a baking dish and line the quartered potatoes in it.

Top the potatoes with the prepared butter topping.

Bake the potatoes at 350 degrees for 40 minutes.
