Wash yellow split peas by changing water 3-4 times and drain.

In a pot over high heat, add 4 cups of water and the drained yellow split peas.

Bring to a boil over high heat and skim off the foam with a spoon.

Add 2 onions cut into quarters, 1/3 tsp red chili flakes, and 1/3 tsp cumin seeds.

Reduce heat to medium and simmer for 30 minutes with the lid on, stirring once or twice.

After 30 minutes, reduce heat to the minimum and simmer uncovered for 10 more minutes.

Once the yellow split peas look like a puree, turn off the heat and add 2 pinches of salt, 1 pinch of black pepper, juice from 1 lemon, and 4 Tbsp of olive oil.

Use a hand blender to puree the mixture while it is still hot.

Transfer the Greek fava into a container with a lid and let it rest for an hour at room temperature.

Close the lid and refrigerate overnight.

Serve cold with slices of red onion on top and lemon slices on the side, drizzling olive oil before eating.
