Coconut Fried Dumplings

Traditionally, these dumplings are made to celebrate gatherings and special occasions. Today, they are enjoyed not only in Jamaica but also in Caribbean communities worldwide, with various adaptations that include different spices or fillings.

Unsweetened flakes reduce sugar content, and desiccated coconut is often less expensive.
In a mixing bowl, add 2 cups of all-purpose flour, 4 teaspoons of corn starch, and 1 egg.
Add 1/2 cup of condensed milk, 1 tablespoon of butter, 1 tablespoon of baking powder, and 1 tablespoon of cardamom powder.
Mix all the ingredients well to form a dough. If the dough is too hot, add 2 to 3 tablespoons of cold milk; if it's too soft, add 1 to 2 tablespoons of flour.
Set the dough aside and let it rest for 10 minutes.
In a pan, add 1/2 cup of sugar and 1/2 cup of water to prepare the sugar syrup. Cook until the sugar dissolves, then turn off the flame and set aside.
Shape the dumplings into oval shapes or any preferred shape, keeping in mind they will double in size when frying.
Deep fry the dumplings in hot oil over medium flame. Flip continuously for even cooking until they are golden brown.
If the oil gets too hot, switch off the flame for a while and continue cooking.
Once the dumplings are cool, dip them for a second in warm sugar syrup and coat them with desiccated coconut.
