Combine 156 g of all-purpose flour, 21 g of honey, ¼ teaspoon of instant yeast, and 184 g of room temperature skimmed milk to create the sponge; let it sit at room temperature for 2-4 hours or overnight in the fridge for better flavor.
In a separate bowl, mix 35 g of room temperature water, 174 g of all-purpose flour, ½ teaspoon of instant yeast, 1 teaspoon of salt, and 71 g of soft butter to form the dough.
Combine the sponge with the dough mixture and knead until smooth and elastic.
Place the dough in a greased bowl; cover and let rise until doubled in size.
Shape the dough into a loaf and place it in a greased loaf pan; cover and let rise again until doubled.
Preheat the oven and prepare for baking with 5-6 pieces of ice for steam.
Bake the bread until golden brown and sounds hollow when tapped.
Brush the top with melted butter after removing from the oven.
