Add the citrus peels to about 1.5 cups of sea salt and mix.

Let the mixture sit uncovered until the peels dry out and scent the salt.

Blend the mixture in a Vitamix blender until fine.

Add 0.5 cups of sugar and 0.5 cups of kosher salt to the blended mixture and stir.

Process the mixture in the blender until well combined and fine.

Moisten a portion of a glass with a cut lime and dip it into the citrus salt for a partial rim.
