Sweet Potato Hash Browns

1.5 pounds sweet potatoes
1 cup chopped onion
2 teaspoons olive oil

Peel the sweet potatoes and wash them well to remove any dirt.

Cut the sweet potatoes into smaller pieces for the food processor.

Use a food processor with a shredding disc to shred the sweet potatoes.

Add 1 cup of chopped onion to the shredded sweet potatoes and stir well.

Heat 2 teaspoons of olive oil in a skillet over medium heat and spread it around.

Add half of the sweet potato and onion mixture to the skillet and flatten it out.

Let it cook for about 7 to 8 minutes without stirring.

After 7 to 8 minutes, flip the sweet potatoes and flatten again.

Cook for another 3 to 5 minutes, depending on desired crispiness.

Once the first batch is done, set it aside and cook the second batch in the same way.

After the second batch is cooked, mix both batches together in the skillet until heated through.
