2 medium sweet potatoes
1 medium onion
2 tablespoons rice flour
2 large eggs

Shred the sweet potatoes using a box grater until you have a bowl of sweet potato strings.

Slice the onion into thin slices and add to the bowl with the sweet potatoes.

Add thin slices of jalapeno pepper to the mixture (optional).

Mix the sweet potato, onion, and jalapeno together in the bowl.

Add about 2 tablespoons of rice flour to the mixture and mix until the flour coats the sweet potato strings.

Crack 2 large eggs into a bowl and beat them before adding to the sweet potato mixture.

Season the mixture with salt, pepper, and curry powder (optional).

Add chipotle powder for additional heat and flavor (optional).
