Start with one head of cabbage and chop it into small pieces.
Peel and seed one cucumber, then chop it.
Quarter one pint of grape tomatoes and add to the bowl.
Chop green onions and garlic scapes, then add them to the salad.
Add chopped preserved lemons, cilantro, and parsley to the mixture.
Season the salad with 1.5 teaspoons of salt, fresh black pepper, 2 teaspoons of cumin, 2 teaspoons of paprika, and 1 teaspoon of sumac.
Add 2 teaspoons of harissa paste for spice.
Pour in 4 tablespoons of olive oil and 3 tablespoons of apple cider vinegar, then mix everything together thoroughly.
Let the salad sit for about 3 or 4 hours to marinate.
