Remove potatoes from water and let cool for 15 minutes.
Grate the cooled potatoes into a large bowl.
If the potatoes are too soggy, squeeze out any extra liquid.
Add dried oregano, garlic powder, flour, salt, and pepper to the grated potatoes and mix with fingers until well combined.
If the mixture is sticky, add a little flour to your hands to form small balls or bite-sized pieces.
Heat vegetable oil in a pan, ensuring it isn't too hot.
Fry the tater tots for about 3 to 4 minutes until they are a nice golden color.
