Cut the rolled dough into desired shapes (fettuccine, tagliatelle, etc.).
Dust the cut pasta with semolina flour to prevent sticking.
Repeat with remaining dough pieces.
Bring a large pot of salted water to a boil.
Add the pasta and cook for 2-4 minutes until al dente.
Drain the pasta and toss with your favorite sauce.
Serve immediately, garnished with black pepper and nutmeg.
