Put on an apron.
Gather ingredients: 2.5 cups all-purpose flour, 1 envelope rapid rise yeast, 0.5 teaspoon onion powder, 3/4 cup regular beer, 1/4 cup softened butter, 1 tablespoon hot honey, 0.5 teaspoon salt, 1 egg, 1 teaspoon water, and 2 tablespoons sesame seeds.
Grate frozen butter to soften it quickly.
Weigh out 2.5 cups of flour (354 grams).
Add flour and yeast to the stand mixer bowl and attach the dough hook.
Heat 3/4 cup of beer in the microwave for 20 seconds to take the chill off.
Add the warmed beer to the stand mixer while it's running, slowly incorporating it into the flour and yeast mixture.
Adjust the consistency by adding more beer or flour as needed.
Add 0.5 teaspoon of salt to the mixture.
Add the softened butter and mix until incorporated.
Add 1 tablespoon of hot honey and mix until combined.
Knead the dough by hand until it feels elastic and not sticky, about 5-10 minutes.
Place the dough in an oiled bowl, cover with spray, and let it rise for about 1 hour in a preheated oven (stopped at 100°F).
After 45 minutes, check the dough; it should have risen well.
Dust the surface with flour, punch down the dough, and form it into a ball.
Divide the dough into 8 equal pieces and roll each into a ball.
Prepare a baking sheet with parchment paper and place the dough balls on it.
Cover the dough balls and let them rise for another 20-25 minutes in the oven.
Make the egg wash by mixing 1 egg with 1 teaspoon of water.
