Preheat oven to 350°F (175°C).
Boil water in a large pot and add salt.
Cook macaroni according to package instructions until al dente, then drain and set aside.
Grate the medium-sized onion using a grater.
Chop the scotch bonnet pepper finely, removing seeds and white membrane to reduce heat.
In a bowl, whisk together 2 eggs.
Add freshly ground black pepper, dry mustard, salt, chopped scotch bonnet pepper, and grated onion to the eggs; whisk to combine.
Pour in 1.5 cups of evaporated milk and add 0.25 teaspoons of nutmeg; whisk until well mixed.
Add 2.5 cups of grated old cheddar cheese to the mixture, reserving about 0.25 cups for topping; stir to combine without melting the cheese.
Combine the cooked macaroni with the cheese mixture, stirring well to incorporate.
Grease a baking dish with butter.
Transfer the macaroni mixture into the greased baking dish, spreading it evenly.
Top the macaroni pie with the reserved cheese and sprinkle with paprika for color.
Bake in the preheated oven on the middle rack for about 40 minutes, or until the top is golden brown.
