Chop 1 whole onion, 1/2 red bell pepper, 1/2 green bell pepper, and 4 cloves of garlic.
Heat a little avocado oil in a 12-inch cast iron skillet.
Add 2 lbs of ground beef and 2 lbs of Italian sausage to the skillet.
Season the meat with 2 tsp garlic powder, 2 tsp onion powder, 1 tsp black pepper, 1 tsp oregano, 1 tsp thyme, 1 tsp smoked paprika, and 1 tsp beef powder.
Cook the meat until halfway done, then add the chopped vegetables.
Stir in the vegetables and cook for about 5 minutes.
Drain the excess oil from the meat mixture.
Add 1 cup of tomato paste to the meat and stir for about 2 minutes.
Add 3 cups of diced tomatoes (no salt added) and 2 cups of tomato sauce to the mixture.
Pour in 4 cups of beef broth and stir everything together.
Reseason with 1 tsp Italian seasoning, black pepper, garlic powder, onion powder, oregano, thyme (about 1/2 tsp), and smoked paprika.
Taste the mixture and adjust seasoning if necessary.
Add bay leaves and chopped basil leaves to the pot.
Break up about 1 lb of lasagna noodles and add them to the soup.
Let it cook for about 10 to 15 minutes, stirring occasionally.
Prepare the ricotta mixture by combining 1/2 cup ricotta cheese, 3 tbsp parsley, and 1/2 cup grated Parmesan cheese.
After 15 minutes, add 1/2 cup of cream to the soup, along with 1/3 cup of mozzarella cheese and 1/3 to 1/2 cup of cheddar cheese.
Stir everything together and let it cook for an additional 5 minutes.
Serve the lasagna soup and top with the ricotta mixture.
