Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil.
Once the oil is hot, add in 1/2 cup of chopped onions and sauté until soft.
Add 1 pound of lean ground beef to the skillet and break it up as it cooks.
Stir in 1 teaspoon of minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.
Once the beef is browned, transfer it to the bottom of the crock pot.
Add a 28 oz can of tomato puree or crushed tomatoes and one undrained can of diced tomatoes to the crock pot.
Add 1/4 cup of tomato paste and mix well.
Pour in 1.5 to 2 cups of chicken broth, mixing to combine.
Add 1 teaspoon of Italian seasoning, 1/2 teaspoon of dried rosemary, 1 teaspoon of dried basil, and 1 teaspoon of dried oregano. Mix well.
Cover the crock pot and cook on high for 3 hours or low for 6 hours.
In a bowl, combine 8 oz of ricotta cheese and 1 cup of shredded mozzarella cheese.
Add 2 tablespoons of dried basil to the cheese mixture and mix until combined. Cover and refrigerate until ready to serve.
After 3 hours, break 8 to 12 lasagna noodles into 1-inch pieces and add them to the crock pot.
Stir the noodles into the soup and cover the crock pot again.
Cook on high for an additional 20 minutes, checking consistency and adding more chicken broth if necessary.
Once done, serve the soup in bowls and add a dollop of the ricotta and mozzarella mixture on top.
