Oats are a healthier alternative with more fiber.
Start by removing the crust and crumbling white bread into a bowl.
Pour milk over the crumbled bread, kneading by hand until a smooth paste forms.
Coarsely chop walnuts and sauté apples in a pan with a bit of vegetable oil until they soften, about 10 minutes.
Rub the duck inside and out with salt.
Create a cavity between the skin and meat to prevent the breast from drying during roasting.
In a separate bowl, combine garlic powder and coriander with the soaked bread, seasoning with salt and white pepper.
Add sautéed apples and nuts to the mixture and mix everything together.
Fill the cavities between the skin and duck breast with the prepared stuffing and place the remaining stuffing inside the duck.
Lay the duck in a roasting tray, sprinkle chopped garlic on top, and add water or chicken broth to the tray.
Include some peppercorns and optional fresh or dried rosemary in the tray.
Cover the tray with aluminum foil and roast the duck in a preheated oven at 200°C for an hour.
Remove the foil, return the tray to the oven, and increase the temperature to 240°C.
Roast until the duck turns golden brown, approximately 30 to 45 minutes.
Turn off the oven and let the duck rest for 15 minutes before serving.
