1 lb boneless chicken thighs
1 red onion
1 bell pepper
1 zucchini
1 cup mushrooms
1/2 cup Italian dressing
1/4 cup balsamic vinegar
sea salt
ground pepper

Cut bell peppers into about 1 inch strips.

Cut zucchini into about 1/4 inch strips at an angle.

Prepare red onion and mushrooms as desired.

If using boneless chicken breasts, pound them for even cooking.

In a bowl, mix vegetables with about 1/2 cup Italian dressing and 1/4 cup balsamic vinegar.

Arrange the vegetables on a baking sheet without overlapping.

Trim excess fat from boneless chicken thighs and coat with remaining dressing and vinegar.

Spray the baking sheet with cooking spray or brush with olive oil.

Place the chicken thighs on the baking sheet and season with sea salt and ground pepper.

Preheat the oven to 425°F and bake for 20 to 25 minutes.
