80ml water (room temperature)
1 tsp sugar
2 tsp dry yeast
350g bread flour
1 tsp salt
160ml milk (room temperature)
2 tbs olive oil
1 tbs fresh thyme (optional)
Extra flour for kneading

Mix water, sugar and yeast. Let it sit while you mix other ingredients.

In a large bowl, mix bread flour, salt, milk, olive oil and thyme.

Add yeast mixture to the ingredients in the large bowl. Incorporate well.

Flour work surface. Slap and fold the pita bread dough for about 2 minutes.

Knead for 10 minutes. Shape dough into a ball.

Cover dough ball with a little bit of olive oil inside the large bowl. Cover the dough and let it proof for 1 hour.

Flour work surface again to put the pita bread dough on it. Cut into 5 equal pieces. Shape each piece of dough into a ball.

With a rolling pin, roll out each piece very thinly. Sprinkle flour if it's too sticky.

Heat 1 tsp of olive oil in a skillet. Cook the dough 3-5 minutes at medium-low temperature.
