Potato Gratin Dauphinois

2 lbs russet potatoes
2 tbsp unsalted butter
2 cloves garlic
1 cup sour cream
1 cup swiss cheese
1 cup milk
1 tsp kosher salt
1/2 tsp ground pepper
1/2 cup cheddar cheese

Slice russet potatoes to about 1/8 of an inch thick using a slicer.

Melt unsalted butter and coat the bottom of a baking dish.

Chop garlic in a food processor and add to the sliced potatoes.

Mix sliced potatoes with sour cream and garlic in a bowl by hand.

Layer the potatoes in the buttered pan, sprinkling with kosher salt and ground pepper between layers.

Add thick cut swiss cheese on top of each layer of potatoes.

Repeat layering until all potatoes are used, sprinkling with salt and pepper and adding cheese as you go.

Pour milk over the layered potatoes for creaminess.

Place the dish in the Traeger smoker and cook at 365 degrees for about 1 hour.

After 1 hour, mix 1 egg with a dollop of sour cream and mop the mixture over the top of the potatoes.

Return the dish to the smoker and cook at 365 degrees for an additional 15 minutes.
