Let the potatoes dry on a clean dry teeter.

Combine 300 mL of milk, 1 roughly chopped shallot, and garlic in a bowl.

Add 300 mL of cream to the mixture.

Sprinkle in some thyme and a pinch of nutmeg.

Set the mixture at 120 degrees for 5 minutes on speed 1A.

Rub butter onto the dish to prevent sticking.

Layer about half of the potatoes in the dish.

Cover the first layer of potatoes with some of the milk mixture.

Neatly layer the remaining potatoes on top.

Add the rest of the milk mixture over the top layer of potatoes.

Sprinkle Parmesan cheese (or gruyere cheese) on top.
