60 grams tomato slices

In a bowl, add 200 milliliters warm water and 1 1/2 tablespoons sugar. Whisk until the sugar dissolves.

Add 1 tablespoon dry yeast and whisk well. Let it rest for 10 minutes until foamy.

After resting, add 550 grams all purpose flour, 1/2 teaspoon salt, and 1 tablespoon olive oil. Mix well. Add 150 milliliters warm water and knead into a soft dough.

Add 2 teaspoons olive oil and knead again. Cover the dough and let it rest for 1–2 hours, or until doubled in size.

Lightly flour a surface and turn out the dough. Divide it in half. Shape and place the portions on a baking dish. Let them rest for 30 minutes.

In a blender, add 250 grams boiled white chickpeas, 1 tablespoon pickled cucumber, 1 tablespoon pickled jalapeno, 2 tablespoons tahini, 1 tablespoon garlic, 1 teaspoon vinegar, 1 tablespoon olive oil, 1/2 teaspoon salt, 1 tablespoon cilantro, 45 milliliters water, and 1 teaspoon olive oil. Blend until smooth and keep aside.

Take the rested dough and score the surface with slits. Preheat the oven to 356°F/180°C and bake for 30 - 35 minutes.

Remove the bread from the oven and let it cool slightly. Slice it into pieces.

Heat some olive oil in a pan, toast the bread slices on both sides until golden and crisp.

Spread a generous amount of the prepared chickpeas mixture on each toast. Top with avocado slices and tomato slices, a drizzle of olive oil, a sprinkle of sea salt, and chilli flakes.
