Miso Glazed Sweet Potato Ramen

2 medium sweet potatoes, peeled and cubed
4 cups vegetable broth
2 packs of ramen noodles
2 tbsp miso paste
1 tbsp soy sauce
1 tbsp sesame oil
1 tsp ginger, grated
2 cloves garlic, minced
1 cup spinach, chopped
2 green onions, sliced
1 tbsp sesame seeds for garnish

Preheat the oven to 400°F (200°C).

Toss the cubed sweet potatoes with sesame oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender and slightly caramelized.

In a large pot, heat the vegetable broth over medium heat. Add the grated ginger and minced garlic, and simmer for about 5 minutes.

Stir in the miso paste and soy sauce until fully dissolved in the broth.

Add the ramen noodles to the pot and cook according to package instructions, usually about 3-4 minutes.
