Chop the carrots and spring onions.
In a pot, heat some oil and add the chopped carrots and spring onions, sautéing until softened.
Add the canned tomatoes and bring to a simmer.
Add the Welsfilet (or other white fish) and cook until the fish is done.
Stir in the Suan Cai and Yamok Sauce.
In a small bowl, mix the cornstarch with a bit of water to create a slurry, then add it to the pot to thicken the stew.
Season with white pepper, salt, and sugar.
Finally, stir in the egg white to finish the dish.
