In a separate bowl, combine 1/2 cup of water, 1 1/2 teaspoons of dry yeast, and 3 tablespoons of honey, mixing in about a quarter cup of flour from the total amount to activate the yeast.
Let the mixture sit for 5 minutes to activate the yeast.
After 5 minutes, add 2 eggs and 2 tablespoons of canola oil to the flour.
Add 2 teaspoons of salt and mix with a wooden spoon until it comes together.
Transfer the dough to a floured surface and knead for about 5 minutes, adding flour as needed to prevent sticking.
Shape the dough into a ball and place it in a greased bag, squeezing out excess air and tying it off.
Refrigerate the dough overnight or let it sit at room temperature for 2 hours to rise.
Slice 3 medium white onions and cook them slowly in 2 tablespoons of butter on low heat, adding 1/2 teaspoon of salt and 1/4 teaspoon of white pepper, covering and cooking for about 20 minutes, stirring every 5 minutes.
Boil 1/2 gallon of water with 2 teaspoons of salt, then add 1 cup of red lentils and cook for about 5 minutes, stirring and covering.
Strain the lentils and let them cool down after cooking.
Once the onions are soft, add 2 cloves of chopped garlic and 1/4 cup of parsley, then let the mixture cool down.
Chop the cooked onions and mix them with the cooled lentils to create the filling.
Take half of the dough and roll it out to about 1/8 inch thick, cutting it into squares.
Place about 1/3 cup of filling onto each square and fold it over to create a triangle, sealing the edges with a fork.
Spray the turnovers with a little spray oil and cover them with plastic wrap, letting them sit for about 2 hours to rise.
After 2 hours, brush the turnovers with 2 tablespoons of melted vegan butter before baking.
