2 cups chickpeas (garbanzos), soaked overnight
4 cups vegetable broth
1 cup short-grain rice
1 medium onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 tsp smoked paprika
1/2 tsp saffron threads
1/2 cup peas (fresh or frozen)
1/4 cup olive oil
Salt to taste
Black pepper to taste
Fresh parsley, chopped (for garnish)

In a large skillet or paella pan, heat the olive oil over medium heat.

Add the chopped onion and garlic, sauté until translucent.

Stir in the diced red and green bell peppers, cooking for another 5 minutes.

Add the soaked chickpeas and sauté for a few more minutes.

Stir in the rice, smoked paprika, and saffron, mixing well to coat the rice with the oil and spices.

Pour in the vegetable broth and season with salt and black pepper.

Bring the mixture to a boil, then reduce the heat to low and cover the pan.
