Preheat the oven to 350°F (175°C).
Clean the goose thoroughly and pat dry with paper towels.
Season the inside of the goose with salt, pepper, and herbs.
Stuff the cavity with quartered apples, onions, garlic, and herbs.
Rub the outside of the goose with butter and season generously with salt and pepper.
Place the goose breast-side up on a roasting rack in a large roasting pan.
Arrange chopped carrots, celery, and remaining apples around the goose.
Pour chicken broth into the roasting pan to keep the meat moist.
Roast in the preheated oven for about 2-2.5 hours, basting every 30 minutes.
Check the internal temperature; it should reach 165°F (74°C) in the thickest part.
If the skin is not crispy, increase the oven temperature to 400°F (200°C) for the last 15-20 minutes.
Remove the goose from the oven and let it rest for 15-20 minutes before carving.
Serve with roasted apples and vegetables from the pan.
