Remove the goose from the packaging and remove the giblet bag.
Rinse the goose inside and out; pat dry with paper towels.
Trim the goose of excess fat around the visceral cavity.
Rub the inside and outside with a mixture of garlic, salt, pepper, and marjoram.
Place the goose in a large dish, cover, and marinate in the refrigerator overnight.
The next day, keep the marinated goose at room temperature for a couple of hours before roasting.
Squeeze the juice of half a lemon and mix it with honey.
Chop off the ends of the goose wings at the first joint to prevent burning.
Prick the goose on all sides with a bamboo skewer to encourage fat rendering as the goose roasts.
Coat the goose with the lemon juice and honey mixture.
Place thyme and rosemary sprigs inside the cavity.
Tie the legs and wings.
Secure the neck skin with toothpicks to the back.
Transfer the goose to a large roasting pan with a rack, breast side down.
Pour apple cider into the roasting pan.
Cover with aluminum foil and place in the oven preheated to 375°F (190°C).
Roast for 1 hour.
Remove from the oven and flip the goose breast side up.
Cover again with aluminum foil and roast for another hour.
After 1 hour, take the goose out of the oven and remove the aluminum foil.
Flip the goose breast side down, baste with drippings, and return to the oven.
Roast for 30 minutes (uncovered).
Wash your apples, cut them in half, and remove seeds.
Take the goose out of the oven and flip it breast side up.
Baste the goose with drippings.
Place apples around the goose.
Return the goose to the oven and roast for another 30 minutes (uncovered).
Check the internal temperature for doneness; it should reach at least 165°F (74°C).
Loosely cover the roasted goose with aluminum foil and allow to rest for 15 minutes.
Transfer the apples and goose to a large plate.
Untie the goose legs and wings.
Garnish with fresh parsley.
Serve and enjoy!
