Welcome to Plato's Corner. Today we're making three types of flautas: beef, chicken, and potato with cheese.

For the beef flautas, add 1 pound of shredded beef to a pot with a couple of bay leaves, 2 whole garlic cloves cut in half, 1 teaspoon of salt, and enough water to cover the beef, about 3 cups.

For the chicken flautas, add 1 whole chicken cut into pieces, 2 whole garlic cloves cut in half, 1/2 white onion cut into quarters, cilantro, 1 teaspoon of salt, and enough water to cover the chicken, about 6 cups.

For the potato and cheese flautas, add 3 potatoes cut into quarters, 1 teaspoon of salt, 1 teaspoon of pepper, and 4 cups of water to a pot.

Add 6 tomatoes, whole allspice, oregano, and a bay leaf to the pot for the chicken.

Cook the chicken until the skin starts falling off, about an hour.

For the avocado salsa, blend 1 chile serrano, 1 whole avocado, 3 tomatillos, 20 strands of coriander, 1 cup of water, and 1 teaspoon of salt. Refrigerate for later.

Once the tomatoes are cooked, remove the onion and bay leaf, blend the tomatoes with some of the water, and add 1 teaspoon of salt for the salsa.

Once the potatoes are done, peel them, mash them in a bowl with a little water, and mix in 1 cup of cheese and 1 tablespoon of salt.

Heat the corn tortillas until pliable, then roll them with the filling of your choice: beef, chicken, or potato and cheese.

Heat vegetable oil in a frying pan and test it by checking for bubbles. Fry the rolled tortillas until golden brown on both sides.

Serve the flautas with lettuce, queso fresco, guacamole salsa, and top with sour cream.
