In a small pot add peeled and chopped potatoes, clove of garlic and water to cover potatoes by a half an inch.

Bring water to a boil and cook uncovered until potatoes are fork tender.

Drain potatoes and place in a large bowl.

While potatoes are still hot add butter, salt, pepper, onion powder, smoked paprika and mash well.

Allow potatoes to cool before handling.

Take your corn tortillas, put them on a plate covered with a damp cloth and microwave in 20 second intervals until warm and soft enough to roll without tearing.

In a small bowl combine corn starch and water, set aside until ready to use.

Take a warmed corn tortilla, add 2 tbsp of mashed potato filling, a Tbsp or so of shredded cheese of your choice and tightly roll 3/4 of the way.

Next smear the end of the tortilla with the cornstarch paste mix and finish rolling out into a flauta/taquito.

Place seam side down on a tray lined with parchment paper or wax paper to prevent sticking to surface.

Continue the process until all flautas are assembled.

Preheat a skillet with 1/2 to 3/4 of an inch deep of the fry oil of your choice to about 350 degrees F / 176 degrees C.

Place 2 to 3 flautas seam side down in the pan and fry for 2 minutes or until exterior is crispy and golden brown.

Garnish and top with sour cream, shredded lettuce, salsa and extra cheese or dip into the sauce or creamy dip of your choice.
