Pupusa con Queso

3 cups masa harina
1 tablespoon salt
2 3/4 to 3 cups warm water
2 cups shredded green cabbage
1 cup shredded carrot
1/2 thinly sliced red onion
1/2 cup white or apple cider vinegar
1/2 cup water
1 tablespoon oregano
Salt to taste
2 tablespoons extra virgin olive oil plus more
1 white onion, diced
1 tablespoon garlic, minced
1 can black beans with the water
1-2 teaspoons sazon
1 1/2 cups shredded mozzarella cheese

Mix masa harina with salt. Add water, and mix well until hydrated. Knead dough for about 5 minutes until the texture is like playdough and there are no cracks around the edges when testing out a rolled, flattened ball. Cover with plastic wrap and set aside for 10-15 minutes.

While the dough is resting, make the curtido. Boil vegetables in water for about 10 minutes. Drain and add vinegar, water, oregano, and salt. Mix and let chill in the fridge.

While the curtido is cooling, make the filling. Over a medium pan over medium high heat, saute the onions and garlic in olive oil until translucent, about 5-7 minutes. Add beans with the water. Simmer about 5 minutes. Add sazon and mix well. Turn off heat and using a potato masher or inversion blender, mash beans. Remove from heat and let cool. Add cheese to bean mixture for bean and cheese pupusas, or set aside for just cheese or bean pupusas.

To assemble, lightly cover the palms of your hands in olive oil. Pinch off 1/4 cup of dough and roll into a ball. Flatten until about 1/2 thick, add 1-2 tablespoons of filling, pinch into a half moon, and roll into a ball again. Gently flatten out into a disk until about 1/4 to 1/2 inch thick. Repeat with remaining dough.

In a pan, griddle, or comal over medium high heat, grill pupusas for about 4 minutes on each side. Serve hot with chilled curtido.
