Pupusa con Queso

Prepare the curtido by boiling 1 lt of water and adding 1/2 green cabbage, 1 carrot, 1 onion, oregano, vinegar, and salt to taste, along with jalapeño if desired.

For the dough, mix 1-2 lb of corn flour with room temperature water until a dough forms.

Divide the dough into equal portions and flatten each portion into a disc.

Place cheese and refried beans in the center of each disc.

Fold the edges of the disc over the filling to enclose it completely and flatten gently to form a thicker disc.

Heat a comal or flat pan over medium heat and cook the pupusas until golden brown on both sides.
