Gradually add whole milk a little at a time while whisking to avoid lumps; bring back to a boil.
Stir in the cheese mixture (1 cup gruyere and 2 cups extra sharp white cheddar), reserving about half a cup for topping.
Add creme fraiche to the cheese sauce and mix until combined.
Add the cooked macaroni to the cheese sauce and stir to coat evenly.
Transfer the mac and cheese mixture to a baking dish and spread it out evenly.
Top with reserved cheese mixture for a cheesy crust.
Bake in a preheated oven at 350°F for about 20 minutes until bubbly.
Let cool for about 15 minutes before serving.
