500g flour
1 tsp salt
300 ml warm water
1 tbsp active dry yeast
1 tbsp olive oil
150g feta cheese
150g cream cheese
200g mozzarella cheese (shredded)
Chopped cilantro and scallions (to taste)
1 egg

In a large bowl, mix the flour and salt. Add the warm water and yeast, stir, and let sit for 5 minutes to activate the yeast.

Add the olive oil, then knead the mixture into a smooth dough.

Cover the dough and let it rise in a warm place for 1 hour, or until doubled in size.

In a bowl, mix together the feta, cream cheese, mozzarella, cilantro, scallions, egg, salt, and pepper until well combined.

Divide dough into two portions and roll each one out flat.

Spread butter on top of both pieces, then stack them.
