Start by making the marinade on low heat. Combine spring water, date sugar, agave, ginger powder, smoked sea salt, cayenne powder, onion powder, and liquid smoke in a mixing bowl.

Mix the marinade until all ingredients dissolve.

Prepare the zucchini by cutting off the ends and slicing it thinly using a potato peeler or mandoline, aiming for paper-thin slices.

After slicing the zucchini, let it marinate in the marinade for about 15 minutes, longer if possible for more flavor.

Toss the zucchini in the marinade. You may have leftover marinade which can be saved or used for more zucchini bacon.

Lightly grease a baking sheet with grape seed oil and lay out the marinated zucchini slices, ensuring they are separated but can be close together.

Preheat the oven to 400°F (204°C) and bake the zucchini bacon for about 10 minutes.

After 10 minutes, take the bacon out and flip the slices, then return to the oven for another 3 minutes, watching closely to prevent burning.
