1 bay leaf

1½ tbsp unsalted butter
1½ tbsp all-purpose flour
1½ cups warm milk
1 cup cheddar cheese
1 tbsp hot sauce
2-3 tbsp Parmesan cheese
4-6 cups tortilla chips
Chopped onion
Chopped tomato
Thinly sliced jalapeño chili
Fresh coriander
Sour cream or plain yogurt

In a bowl, mix together all the meat ingredients until well combined.

Heat 1 tsp of cooking oil in a cast-iron or non-stick pan. Add cinnamon sticks, cloves, bay leaf, and cumin seeds. Sauté for 30-40 seconds until fragrant.

Add the meat mixture to the pan and cook for 7-8 minutes, breaking it up and stirring occasionally until the meat is done and crisped.

In a separate saucepan, melt the butter and add the flour. Cook for 2-3 minutes until the flour changes color.

Add the warm milk, ¼ cup at a time, stirring until the mixture thickens. Add the cheddar cheese and hot sauce, mixing well.

Finally, add the Parmesan cheese and cook for an additional 2-3 minutes. Add salt & pepper to taste and keep warm.

On a serving plate, spread the tortilla chips. Evenly pour the cheese sauce over the chips.

Sprinkle with chopped onion, tomato, and thinly sliced jalapeños. Add the cooked meat on top, and garnish with fresh coriander and a dollop of sour cream or plain yogurt.
