Preheat the oven to 425 degrees with the rack in the middle position.
Trim the central core of the cauliflower and remove the leaves.
Roughly chop the cauliflower into florets and transfer to a parchment-lined baking sheet.
Drizzle with extra virgin olive oil, salt, and pepper, then roast for 30 minutes.
After 15 minutes, toss the cauliflower and return to the oven for an additional 15 minutes.
Chop mini cucumbers into chunks and quarter the grape tomatoes.
Roughly chop half a cup of marinated artichokes and slice 12 olives in half.
Roughly chop 2 tablespoons of drained capers and finely dice 3 cloves of garlic.
In a large bowl, combine chopped cucumbers, quartered tomatoes, chopped artichokes, sliced olives, chopped capers, and diced garlic.
Add 1/4 of a sliced and chopped red onion and 1/4 cup of roughly chopped parsley to the bowl.
Add 1/4 teaspoon of chili flakes to the bowl.
Once the cauliflower is roasted, add it to the bowl while hot and toss everything together.
Drizzle with extra virgin olive oil, add salt and pepper, and squeeze the juice from 1 lemon over the mixture.
Toss the salad again to combine all ingredients.
