3 leeks washed and roughly chopped
8 slices of srano ham
400 mls of red table wine
400 mls of chicken stock
400 mls of milk
125 g of butter cubed
2 tsp of corn flour mixed with 2 tsp of water

Place a half-filled pot of water on the hob and turn to high heat.

Pour in the drained potatoes and add a few pinches of salt. Cover and cook for roughly 20 minutes.

Set the oven to 175° centigrade or gas mark 3.

Place two slices of ham on the chopping board.

Place a chicken breast lengthways on the ham and carefully fold the ham around the chicken. Repeat with all four chicken breasts.

Place a large frying pan on medium heat and allow to warm for a minute.

Introduce all four wrapped chicken breasts into the pan. Seal them for a minute on each side, taking care the ham doesn't burn.

Turn them with the tongs and seal the other side.

When sealed, transfer into the baking tray and place in the middle of the preheated oven. Allow to bake for approximately 30 minutes.

Place a medium pan on the hob and turn to medium heat.

Add the cubed butter and allow to melt.

Add the leeks and stir. Allow to sweat down for approximately 4 minutes, stirring halfway through. Season with salt and pepper, cover with a pan lid, and turn off the heat.

Place a small saucepan on the hob under high heat and allow to warm through.

Add the red wine and allow to reduce by half.

Add the chicken stock and allow to reduce by a third.

When reduced, add the corn flour. Stir and bring back to the boil. Then turn off, cover, and leave to rest.

Drain the potatoes well into the colander.

Transfer the potatoes into a large bowl for mashing.

Using your potato masher, strongly mash the potatoes.

Add a little butter and half the milk. Keep mashing firmly.

Add more butter and milk and mash the mixture into a creamy smooth texture. Then season and mash some more.

Spoon in the leeks and stir it all in. Cover with a lid and reserve.

Remove the chicken from the oven and allow to rest for a few minutes.

Cut the chicken breasts in half diagonally lengthwise.

Add a spoonful of mash onto an individual serving plate.

Place half the chicken breast alongside the mash.

Drizzle over the red wine sauce.
