Hola Bienvenidos a un nuevo vídeo hoy vamos a hacer fugaz pan bien típico plano francés.
Vamos a utilizar harina 3-0, sal, levadura fresca, y agua fría.
Agregamos la sal y usamos un gancho para amasar.
Agregamos toda la cantidad de agua, en dos partes durante el amasado.
Agregamos la levadura fresca al final del amasado.
Amasamos hasta lograr una masa elástica con un 65% de hidratación.
Retiramos la masa de la amasadora y ponemos aceite de oliva en la mesa para que no se pegue.
Dejamos la masa descansar 10 minutos tapada.
Estiramos la masa para incorporar el orégano y aceitunas, reforzando la red de gluten.
Dejamos descansar la masa 10 minutos tapada después de estirarla.
Dividimos la masa en tres piezas de aproximadamente 300 gramos cada una.
Colocamos las piezas en un tupper con aceite de oliva y dejamos fermentar hasta que duplique su volumen, alrededor de 45 minutos a 1 hora.
Pasado el tiempo de fermentación, desgasificamos la masa sobre una mesa enharinada.
Damos forma a las piezas de masa, haciendo cortes decorativos sin llegar al borde.
Colocamos las piezas en una bandeja con un poco de harina para que no se peguen.
Dejamos reposar las piezas durante 20 minutos.
Cocinamos en un horno medio fuerte a 210 grados durante 12 a 15 minutos, o a 230-240 grados en un horno de piso.
Retiramos del horno y observamos que quedan livianos y crocantes.
